Casino games at the office?

Our company is celebrating our third Anniversary and have decided to have a "Monty Carlo" theme. I am trying to come up with casino type games we can play at the end of the day. I need help b/c I have never been to a casino. I know blackjack and poker, but that's about it. I'm designing a players card-not sure how it will work yet-and am going to p out chips for betting. Any other tipsor ideas would be great. Thanks!
